Capitol Jill Baking specializes in naturally leavened bread, pastries, and modern cakes made with only the best ingredients, with flavors inspired by the seasons, our eclectic home pantry,  and my upbringing in Hanoi, Vietnam. I aspire to create delicious, nutritious, and joyful treats that offer a little respite for you and loved ones amidst your busy lives.

Like many others, I turned to sourdough baking to pass the time as the COVID pandemic swept across the globe. It was cathartic, and nothing brought me more joy than seeing friends and family cherishing my bread, especially when close contact wasn't possible. Food has always been my love language.
