What do you bake? 
I specialize in sourdough bread, savory and sweet treats, with a few special non-yeast items like cookies and bespoke cakes. The menu varies week-by-week. Please visit my instagram or our online preorder page to take a look at the variety of offerings.

Where is your bakery located?
Capitol Jill Baking is a cottage (home-based) microbakery based in Capitol Hill, Washington, DC. We’re just steps from The Roost Food Hall and Potomac Ave metro (blue/silver/orange line).

How do I place an order?
Pre-order opens weekly on Sunday at noon. You can sign up for the email list and/or text list to get the updates.

Do you offer delivery?
We currently don’t have the capacity to offer deliveries. But you’re welcome to send someone else or a courier to pick up your order, as long as you let us know in advance (esp for Uber package).

You’re always sold out. How can I get some bread/pastries?
We’re so grateful for the support and always trying to increase production in our small home kitchen. While our pre-orders sell out pretty quickly, getting on the pre-order site right at noon on Sundays is the best way to get some goodies. We also do custom orders - please reach out via email to inquire (at least 2 weeks in advance please).

I can no longer make my pick-up time. Can I come earlier/later?
We aim to have every single order packed and organized before pickup starts. You're welcome to come whenever during the window (usually 530-7pm unless noted otherwise).

If you want to come outside this window, please email your request (hi@capitoljillbaking.com) as soon as you can. Unfortunately we won't be able to accommodate all requests. If we don’t hear from you by 7:30pm on pick up days, unfortunately we will have to consider your order forfeited with no refund.

I have an allergy. Can you accommodate?
Each item has the list of ingredients and allergens marked on the pre-order page. However, all items are made in a home kitchen where common allergens are consumed and cross-contamination is possible. Please exercise caution and reach out if you have any questions.

Do you offer any gluten-free baked goods?
Not at the moment. But we’re also just a few blocks from Sweet Crimes which is an 100% gluten-free bakery!

Do you sell your sourdough starter?
We’re happy to share some at no cost. Please let us know in advance (via email) to coordinate a pick-up time and bring a lidded container.

Do you offer classes? 
Not yet, but maybe in the future 🙂

What’s Carbs Collective?
Carbs Collective is our monthly bread subscription, which is currently on hiatus until the Spring. Carbs Collective members get 4 weeks of freshly baked sourdough loaves with just 1 pre-order.

Do you take custom orders?
We’d love to be a part of your special occasions! Please reach out via email at least 2 weeks in advance with your requested items, quantity, and preferred pick up date, and please note that we have minimums for every item and a custom order fee will be applied.
